I am a keen amateur cook and watch hours of cookery progs on tv and read alot too. I have watched most of Heston’s ‘The perfect…’ episodes. How the hell is any ‘normal’ person supposed to recreate any of his ‘you can do this at home recipes??!! ‘ Has anyone on here ever tried? Surley not as we spend most of our time thumbing through the form, drinking and posting. Has anyone ever eaten in his restaurant(s)? I read they are very very good and he deserves all the michelin stars he gets. But if you are bloody starving, would you rather have a big mac or a fish pie whilst listening to an i pod of the sounds of the sea?….

Barbie was fired up seven in the evening, first food was ready just after midnight – bl**dy good food but everyone pi$$ed by the time it was ready.
Food in the restaurant is very good – it makes you think and is a multi sensory experience.
Also – probably no surprise here – his wife does not let him cook at home!!!

How indeed, not possessing a flamethrower, centrifuge or anything similar in my kitchen.
I knew I should have nicked more kit from chemistry lessons….
Blumenthal achieved a first by concocting a variant of mashed potato that repulsed even Mrs Column, an absolute conoisseur of the stuff. After watching Blumenthal for what seemed an age ramming potatoes through a blender, adding milk and sugar, attacking them with a bunsen burner, filtering them and basically going through the entire GCSE Chemistry list of experiments to produce a mysterious, filmy white puddle, a clearly perplexed Mrs Column turned to me on the couch and said, "What’s he done with it? I’m not f***ing eating that!!"
Lucky I just find all mashed potato disgusting anyway.

here’s your recipe for today:
peel spuds – boil spuds 20 minutes – mash spuds with good knob butter.
Serve with 1 large pork and leek sausage, some fried onions, and a large dollop of plum chutney [Rick Stein’s is very nice, if you can get it].Bon Appetit!

November 21, 2007 at 17:46 #126159GC, given Mrs Colunm’s love of mash is she a member of the somewhat exculsive and if I may say so rather distinguished ‘Institute of Chessy-Mash’?
My personal recipe:
4 large potatoes
1 large bag of Sainsbury’s grated mature cheese
2 slightly over ripe tomotoes.Wash, peel and cut potatoes into quarters. Boil for 20mins (add salt as required). Drain potatoes and add large knob of butter and a small quantity of milk. Allow butter to melt from the heat of pan and the milk to warm. Mash for 20secs. Add the whole bag of cheese. Mash again for 1min. Transfer the cheesed mash to an over-proof dish. Make nice pattern on top with a fork. Cut the tomotoes into slices and place on top of mash. Grill under a medium heat for 15mins.
Enjoy.
