Well Ian I had a very stressful week and so I cooked a very delicious bolognese and allowed myself a few glasses of forbidden red to unwind, accompanied appropriately by big Al Pacino playing a misery role with his wise guys. My pretendy missus fell over in the bus on the way home and needed a pick me up. The driver braked sharply and although with one hand on the rail she had her feet together.
I will be joining you back on the straight and narrow ‘ there is only one biscuit allowed diet ‘ on Monday.Life must break the matrix pattern on occasion. SO SAID THE SHAMANS.

I cooked the meat separately initially with no oil added. Then in a separate pan I cooked the other ingredients ( I was out of onion left it somewhere else actually. ) I cut up celery a large bulb spring onion and a red pepper ( after taking the cat out if it) cooked those in olive oil and a bit of butter at the end plus salt+pepper – When almost done I added a large bulb of garlic (chopped). When the meat was cooked ( left meat fat in ( sometimes drain out ) not much there in pan because 15%) ) Added one tin of Sainsbury plum tomatoes and some 🍅 paste out of a tube. Salt and ground black pepper added and cooked for further 10 minutes. Then added the other frying pan contents mixed it all up Added rosemary which was fresh ie packet but I broke seal) . Left for over an hour simmering ( added water occasionally ) The pan was covered.
Cooked pasta for about 10 minutes – still al dente – not over cooked. Obviously Parmesan and more black pepper.
I had no onion or bay leaf which I usually add. It’s a sin to add bacon – do not do this. A high meat content is key ie this is not a mean dish. Al Pacino is optional.
You might get a winner in the third race but I was certainly on a surprising winner last night.
