You miss the point SAT, Of course I don’t expect them to speak English, any more than
I expect anyone in England to speak French. It’s where someone has the ability to speak
both, but just shrugs their shoulders when it’s not in their home tongue. In other words,

I have not had many hospital stays in my life but have by and large enjoyed them and I have treated them as three star holidays. I wouldn’t want a silly post to possibly downgrade any future stays. Bringing a weak wishy washy cup of breakfast tea to your bedside with a long face is deserving of a ⭐ in itself.

I think it depends. If you just start speaking English to someone I can see why they’d get annoyed. A quick ‘excusez moi, parlez vous Anglais?’ doesn’t take much.

Are you saying that doesn’t happen ?”I agree it’s an unhelpful attitude, and in a city that attracts millions of tourists it’s not unreasonable to expect to encounter non-French speakers amongst the clientele. But I think really the waiters revel in it like pantomime villains and it’s sort of a game to them. (As you say, with much shrugging and practiced indifference)
I hope your son enjoyed his time at the Sorbonne nevertheless.
